Mini Campmeeting

Inside our lovely church

Moms and grandma's looking after and feeding their children after a long sermon and hot day but still with a smile preparing the meal together. Lots of beans, noodle, rice, green curried lentils, roasts, salads of every kind, and of course dessert on the other table.. very good vegetarian meal.

PANCAKES

No matter what you call them-flapjacks, hotcakes, or pancakes, they are the quintessential breakfast food. Pancakes are a blank canvas that you can transform into a hundred different varieties of fried flour goodness. Chocolate chip pancakes, blueberry pancakes, banana nut pancakes-the sky’s the limit. This is one of my favorite pancake recipes. It produces pancakes that are hearty, nutty, and filling. And the buckwheat makes you feel like you’re eating something healthy.

Prep: 5 minutes Cook: 10 minutes

Makes 8 large, filling pancakes

Ingredients

3/4 cup buckwheat flour
3/4 cup unbleached white all-purpose flour
3 tablespoons sugar
1.5 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans or walnuts, chopped
1.5 cups buttermilk
3 tablespoons unsalted butter, melted
2 eggs

Directions

1. Whisk together the dry ingredients in one bowl and the wet ingredients in another.

2. Mix the wet and dry ingredient together. It’s okay for the batter to be a little lumpy. Overmixing the batter will result in tough panackes.

3. Grease and heat up a skillet over medium heat. Drop 5 inch circles of pancake batter into the pan.

4. Wait for bubbles to emerge on the top of the pancakes and then flip them over.

Top with butter and real Vermont maple syrup.

Peek A Boo

"Peek A Boo - I see You," I overheard my neighbour's child.
"Peek A Boo - I love You," I watched and listened for a while.

The little girl skipped down the walk, humming as she moved.
From time to time, I'd see her stop, and sing her innocent tune.

"Peek A Boo - I see You," Her sweet face looked so intent.
"Peek A Boo - I love You," then down the path she went.

I saw her do this several times, poor lonesome child, I thought.
She only has a nursery rhyme, to go with her on her walk.

"Peek A Boo - I see You," she did it then once more.
"Peek A Boo - I love You," then I scurried out my door.

I could not stand it any longer, what did this child see?
I hurried up and caught her, hoping she'd explain to me.

"Peek A Boo - I see You," her face buried in some Daisies.
"Peek A Boo - I love You," was this child crazy?

"Honey," I call out to her, "What are You looking at?"
(I may have to tell her mother, I needed all the facts.)

She gave me a vacant stare, and said, "There's nothing wrong.
I see Lord Jesus everywhere, that's why I sing my song."

"Mama says He's in the flowers, He's in the bushes and the trees.
He's in rainbows and in showers, He's even in the breeze."

"I see Him everywhere I look, I like to tell Him so.
You see, He's not just in The Book, he's everywhere I go."

"Peek A Boo - I see You," I peeked into her precious face.
"Peek A Boo - I love You," then I thanked God for such grace.

Carmalized Beets

Serve them fresh and raw in salads, potent and alive in juice. These Caramelized Beets do the trick, and it doesn’t take many ingredients to get there. Use them scattered alongside mashed potatoes and seitan, or over your scrambled tofu, tossed into salads, or grains (beets and quinoa = heaven.) They’re crisp and sweet, with just a little tanginess to accentuate the flavors

2 lbs beets, peeled and sliced into 3/4 inch chunks
2 tablespoons olive oil
1/4 teaspoon salt
2 tablespoons balsamic vinegar (plus extra for drizzling)

Preheat oven to 375 F. Line a large rimmed baking sheet with parchment paper.

On the baking sheet, too the beets with olive and salt, to coat. Place in the oven and bake for 50 minutes, tossing every 20 minutes. Drizzle on the balsamic, toss the beets to coat, and cook for 10 more minutes.

Serve warm and drizzle with extra balsamic to taste.

Promise to Chocolate Cake

I promised Chocolate Cake that I would eat it everyday
For I love Chocolate Cake
with every inch of my being
its taste is so sweet
and it makes me feel right
I love Chocolate Cake I would eat it everyday
For it is my favorite food

One day I walked by Apple Pie
The Apple pie was so warm and smelled so good
Just looking at it gave me cravings that Chocolate Cake could not
The apple pie gave me a warmth and yet
it was bitter in the best way

Whats more is the apple pie is so much easier to eat
I had promised Chocolate Cake I would eat it everyday
I needed apple pie though
I craved apple pie and it craved me
Chocolate Cake just sits there looking pretty

Chocolate Cake is still my favorite food
but it is an empty food
It doesn't make you feel
but it must remain my favorite food
because even though I crave Apple pie more
I know that it could never become my favorite food

Sure I would eat Apple Pie everyday
It would even make me feel warm and full the way I want
but I could not eat it everyday
and favor it like I do with Chocolate Cake

I wish I could eat both Chocolate Cake
and Apple Pie
but the two do not mix
each cancels out the taste
of the other
and many people stare at he who would have two plates
of dessert

but after all
I promised Chocolate Cake that I would eat it everyday
For I love Chocolate Cake
with every inch of my being
I will have to just continue to crave Apple Pie
and only have a taste every once in a while
As long as Chocolate Cake doesn't know

Decadent apple cake

Topping
2 medium apples
4 tablespoons butter
3/4 cup light brown sugar, firmly packed
2 tablespoons boiled cider or thawed apple juice concentrate
1/4 teaspoon ground cinnamon
1/2 cup light corn syrup

Cake
3/4 cup vegetable oil
1 cup brown sugar, firmly packed
2 tablespoons boiled cider or thawed apple juice concentrate
2 large eggs
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups King Arthur Unbleached All-Purpose Flour
1 large apple, peeled and finely chopped
3/4 cup chopped pecans or walnuts, optional

1) Preheat the oven to 350°F. Lightly grease a 9" round cake pan at least 2" deep. Line the bottom with parchment, and grease the parchment.2) Slice the top, including the stem, off one of the apples and set it aside before peeling and slicing the rest of the apples into 1/4" thick wedges.3) Place the apple top, stem side down, in the middle of the pan, and overlap the rest of the apple wedges in a ring around it. 4) Prepare the topping by heating the butter, sugar, boiled cider, cinnamon, and corn syrup together over low heat, stirring until the sugar is dissolved. 5) Pour 1/2 cup of the syrup mixture into the prepared pan, and set the rest aside.6) To make the cake: Beat the oil, brown sugar, boiled cider, eggs, spices, and salt together for 2 minutes at medium speed7) Mix the flour with the baking soda, and stir it into the batter.8) Add the chopped apple and nuts, and mix until just blended.9) Drop scoops of the batter atop the apples in the pan, gently spreading to cover.10) Bake the cake for 50 to 55 minutes, or until a cake tester inserted near the center comes out clean.11) Remove the cake from the oven, and run a thin spatula around the edge to loosen.12) Let the cake cool in the pan for 5 minutes, then turn it out onto a serving plate, bottom side up. Scrape out any sauce that remains in the pan, and spread it over the cake.13) Reheat the reserved topping. If butter starts to separate as you reheat, add water by the teaspoon and stir until the butter rejoins the rest of the sauce.14) Pour the sauce over the cake. Serve cake warm or at room temperature, with whipped cream if desired.Yield: 8 to 10 servings.

Fabulous Rhubarb Cake

Ingredients:

1 1/2 cups raw Rhubarb cut fine

1 cup brown sugar

1/2 cup white sugar

1 egg

1/2 cup butter or margarine

1 cup applesauce

1/2 tsp. salt

1 tsp. soda

1 tsp. vanilla

2 cups flour

Procedure:

In large mixing bowl cream sugars and butter, add egg and salt. Stir in applesauce, soda, vanilla, and flour. Add rhubarb. Pour in prepared 9x13x2-inch baking pan and sprinkle with 1/4 cup white sugar and 1 tsp. cinnamon. Bake at 375-degrees for 30 to 35 minutes. The cake is very moist and needs no frosting.

the recipe

small carton of cottage cheese
one medium onion chopped
four eggs
salt
about two cups of crushed/blended crackers
a large dallop of mayonaise
one small can of cream of celery soup

mix all together and fry into patties on a non stick fry pan, otherwise roll in extra cracker crumbs and fry

The Princess and the Pea

Once upon a time there was a prince who wanted to marry a princess; but she would have to be a real princess. He travelled all over the world to find one, but nowhere could he get what he wanted. There were princesses enough, but it was difficult to find out whether they were real ones. There was always something about them that was not as it should be. So he came home again and was sad, for he would have liked very much to have a real princess.
One evening a terrible storm came on; there was thunder and lightning, and the rain poured down in torrents. Suddenly a knocking was heard at the city gate, and the old king went to open it.
It was a princess standing out there in front of the gate. But, good gracious! what a sight the rain and the wind had made her look. The water ran down from her hair and clothes; it ran down into the toes of her shoes and out again at the heels. And yet she said that she was a real princess.
Well, we'll soon find that out, thought the old queen. But she said nothing, went into the bed-room, took all the bedding off the bedstead, and laid a pea on the bottom; then she took twenty mattresses and laid them on the pea, and then twenty eider-down beds on top of the mattresses.
On this the princess had to lie all night. In the morning she was asked how she had slept.
"Oh, very badly!" said she. "I have scarcely closed my eyes all night. Heaven only knows what was in the bed, but I was lying on something hard, so that I am black and blue all over my body. It's horrible!"
Now they knew that she was a real princess because she had felt the pea right through the twenty mattresses and the twenty eider-down beds.
Nobody but a real princess could be as sensitive as that.
So the prince took her for his wife, for now he knew that he had a real princess; and the pea was put in the museum, where it may still be seen, if no one has stolen it.
There, that is a true story.

Just One Step

As I walked down life's road one day,
A mountain rose to block my way.
I couldn't go around, you see,
The pass was narrow -- closed to me.
I asked the Lord, How shall I climb?
Just one step, He said, at a time.
How can I scale that awesome height?
Look up, said He, you'll do all right.
I took some steps and it was great,
I'd go right up and celebrate!
Then I looked down and slipped and fell.
Get up, said He, you're doing well.

So once again I started up,
The road is steep and sometimes rough,
But near the top, the way is smooth,
And there I'll find a well-worn groove.
I'll reach the top one day then stand,
Survey the view that's truly grand.
The Lord waits there and all my friends,
My family, too -- love never ends.
Now I look up, and I can see
The hand my Lord holds out to me.
So carefully each day I climb,
Just one step I take at a time.

the recipe---Beet muffins

Here are Buttermilk, Beetroot and Apple Muffins.
Scored 9 out of 10. Makes six large muffins or 12 smaller ones

1 egg, beaten2/3 cup buttermilk (or milk and 1 tbsp lemon juice)1/2 stick/4tbsp/50g butter, melted1 eating apple, peeled, cored and finely diced2 small beetroot, cooked and finely diced1/2 cup Demerara sugar1 tablespoon of maple syrup1 1/4 cups plain flour1 and a half tsp of baking powder

For the topping1 tablespoon of porridge oats1 tablespoon of Demerara sugar1 teaspoon of cinnamon.

Preheat the oven to 180C. If you are using a deep muffin tray, cut out six squares of baking parchment 15 cms by 15 cms. Line each muffin tin with a square of paper. You can use paper cases if you prefer.

Melt the butter, allow to cool slightly and in a bowl stir in the sugar, beaten egg and buttermilk. Mix well. Add the finely diced cooked beetroot and diced apple and spoon of maple syrup. Sieve the flour and baking powder and roughly stir in so the flour is distributed but don’t over mix. Spoon the mixture evenly into each lined muffin tin. Mix together the ingredients for the topping and sprinkle evenly over the top of each muffin. Cook in the oven for 30 minutes.
