Muffins

Rhubarb Muffins i made for the dental clinic-- Recipe:
These crunchy-topped muffins go well with tea and are best when fresh.

2 cups flour
1 1/2 cups quick cooking rolled oats
1 cup brown sugar
4 tsp baking powder
1 tsp baking soda
1/2 tsp each of salt and nutmeg
2 cups diced rhubarb
2 tsp grated orange rind
1/3 cup of oil and 1/3 cup buttermilk
2/3 cup of orange juice
2 eggs

Mix all your dry ingredients, stir in the rhubarb and then add the wet ingredients. Stir till all flour is wet. Spoon into muffin tins and add the following on top for :

Streusel Topping

1/2 cup quick -cooking oats
1/2 cup brown sugar
4 tbsp ground walnuts
4 tbsp melted butter
good pinch of cinnamon and ginger

Mix well and put on top of muffin mixture

Bake 350 for about 20 minutes or until done.

I make 12 large muffins and a bread loaf pan half full...

Awwwwwwwwwwwwww, what sweet sweet grandbabies! Just look at those wonderful, happy faces. This melts my heart.

The muffins look quite yummy. That one is a 'new' one for me. Never heard of Rhubarb muffins before, I love rhubarb. [Uncooked and raw...sour!! Love it!]

Nothing can bring a bigger smile than children, how precious are your grandchildren! I haven't used any of my rhubarb this year, I will have to fight my way through the heat and make some! They look so nummy, thank you for the recipe!

Thanks for the recipe! I just picked up Rhubarb the other day, chopped it up and froze it to have on hand for strawberry rhubarb pie.
